This has been a busy week for the Food and Beverage Team at The Castle! They are so excited as we approach Christmas they are already jazzing up the cocktails and brewing the Mulled Wine!
Head Chef Mike has shared his take on an Espresso Martini. New one on me but it did taste AMAZING!!!
As it is the season to be jolly and I’m in a giving mood!!
Here is a recipe for my favourite Christmas drink
2x shot espresso
2cl shot khalua
sugar syrup to personal taste
Place all the ingredients in a cocktail shaker with lots of ice and shake vigorously untill cold and the colour has changed to a light brown.
pour in to a Martini glass and enjoy!

Berties new dinner menu is now live and being received really well. As is our new Afternoon Tea menu along with our home-made Viennese peanut butter swirl this one is creating quiet a stir!
As it’s nearly the season to be jolly and Christmas preparation is well under way, here is a recipe to get you in the festive mood
4 x bags of Cranberrys
2 x large onions
1 x carton fresh Orange juice
200g castor sugar
Dice the onions and gently sweat in a heavy bottomed pan till softened. Cover with the cranberries, then pour over the orange juice and add the sugar. Now bring to the boil and then turn down to simmer and cook till reduced and thickened. Pour into a container and leave to cool.
